i want to make fancy boxes to put on table for christmas lunch

"Boxes" can be made all sizes and even all kinds of shapes... and almost anything flat or that can be used in multiples can be used to make sides,etc. for them.
A lot would depend on exactly what you wanted, and what you wanted to put in the boxes, if anything. You also didn't mention if you wanted a lid or otherwise closed box shape, or just an open box shape.

Many boxes can be folded into their shapes (small and large), but most people probably make their own ordinary box shape if a largs-ish one is needed by attaching together individual pieces (4 sides + 1 bottom at least), or they cover an existing box with paint or decorative paper or polymer clay, etc.

When you say "fancy" and "Christmas," I'm assuming you want very embellished boxes or at least "rich" looking colors -- possibly Christmas ones... so you could use gold, silver, red, green and white at least... sometimes blue and white (snowflakes, etc) is good. The boxes could also be embellished with cording or medallions of images or just anything at all that could be glued or attached to them, or wrapped loosely around them (angel hair, etc.) or put into them (colored balls, etc.).

Take an existing box (i am sure you could buy something cheap the right size from a supermarket).
Carefully pull it apart, and viola! a template for you to draw around

Get a cornflakes box and paint it silver then stick some holly inside

There is no difference in using a 2D or 3D model if all your calculations are correct. However, if you want a more detailed view and for clarity purposes, use a 3D model.

Fo 3D boxes with software, that will be easy to do, I think.

get six same size cardboards and glue them together in the shape of a cube!
