Absolutely not. It's nice to have one, but it's not necessary. You will be working in the kitchen with your hands. Any instructions you need to know will be told to your by the sous chef or executive chef. You just need experience in the kitchen. That's what truly counts. And as a pastry chef, you usually end up working in a cold storage area, so certain pastries puff up in the oven.

Depends where you want to work? If you want to work in a top class place i think you need to go to college for a couple of years
