Rooms do get booked fast around the holidays. Book online now. I recommend Holiday Inn Express! (Cheap and Nice!) Shoot for Southern VA (that's about 1/2 way) and just keep driving until you get there! (Maybe you can treat your 2 teenager and get a hotel with an indoor pool - they will need a nice break from driving.)

My dad is a long distance truck driver and he said if you drive for 10 hours from Toronto, you can probably get to Beckley, West Virginia. About an hour further down the road, is Wytheville, Virginia as another option. Pushing a bit further, Statesville or Charlotte, North Carolina are down the road. If you can make it to Charlotte, you're only around 8-10 hours from Orlando.
In terms of a hotel, since you are doing this the weekend leading into Christmas, without a reservation, you may have a hard time getting a hotel room. Now, if you decide to make a reservation at a hotel in one of these 4 cities, your best bet would be to go to the websites of the major chains (Marriott, Hilton, Super 8, Ramada). Do a city search and see what comes up close to the highways. Good luck and enjoy your drive.

Stop by the nearest CAA office before your departure and ask for any travel books that you need to drive to Florida. You'll know the limit as to how far/long you can drive at least an hour or two in advance, so you can determine approximately where you'll be and use the travel books to call ahead and see if there are any places available in that area. Just note that most Canadian cell phones won't work State-side, so you may want to call while you're stopped for gas/meal etc.
We did this on a drive from Toronto to Atlanta this summer and it worked well because we just called the hotel wo hours ahead of time to make sure they'd have something available and they suggested another place closer to the highway for us that was a fraction of the price.

Don't reserve a room. It will limit you too much. What if you leave late and want to stop before you make it to your reservation hotel? Or if you're making good time and you want to keep going? You shouldn't have a problem getting a room as long as you don't stop in a major city. If you're A very cautious person, I would call a few hotels in some of the smaller towns in VA or NC and check their availability.

id say plan on stying somewhere when youre half way there. look now just so you dont end up haveing to sleep in your can. you dont wanna stay locked up in a car with 2 teenagers fighting for space. but start looking NOW!
