After some rain and high humidity in the climate I opend my PC next day and noticed some change in color of the START's buttons and icons of the start menu?

That change in color even extended to the whole left side of my PC screen but does not affect its performance.

It's indeed a weird question, humidity does not affect colors of windows but extreme humid will cause your hardware to malfunction.
There are few cause that affect your monitor from displaying colour correctly,
1 your monitor is spoilt.
2 your monitor is being place near a unshielded speaker or any other magnetic device tht cause discolouration. try move away those magnetic stuff and select the "degauss" function from your monitor and will fix the problem.

Unless you forgot and left the cake...err..the PC out in the rain, it's incredibly unlikely that it has anything to do with the graphics changes.

PCs have pretty broad operational ranges for things like temperature and humidity.
