's and s' show possession - Mr. Jones's car. To pluralize it just add "-es"- The Joneses went on a vacation. Personally, I would just go about it by saying the Jones family, but take your pick.
To show possession it would be "Mr. Jones's car (singular)" or "The Joneses' car (plural.)"

Well, there are two answers to this.
Jesus and other biblical folk have abandoned their extra S so if you wanted to refer to his shoes, you would say: Jesus' shoes. The correct use however, is to add an extra s: St James's Park or Mr Jones's farm.

To pluralize you add es - Jones = Joneses. "From the Joneses."
If you are saying it belongs to them, their home for example, Mr. Jones' home.
