We did this on once....
We connected a Clapper to a coworker's computer monitor. We ran an extension cord to an empy cube down the row and plugged it in. We would walk by the empty cube and make a noise, or cough. His computer monitor would go on and off at random. His computer remained untouched.
Everytime he called the Help Desk, we would stop.
We put it all back to normal the next day.

We do these at school and it may of may not work depending on your office layout. First you need to pick a person. Slowly, throughout the day when they are gone getting coffee or collecting something off of the printer, or even to go to the bathroom, move his/her desk a small ways to the right. Continually do this so by the end of the day, his/her desk is far from where it needs to be. If that doesn't work and you're handy of some sort, take someone's work phone, the one with the handset (does not happen with cell phones) and take it apart. Continually when the person leaves, put either a nickel or something small in it. Only one. By the end of the day, the person will be adjusted to the weight of their hanset. In one swift move, take all of the coins out of the handset and enjoy when they pick up the phone, expecting it to be heavy, and smack themselves in the face. There's plenty more in the clip that I gave you below. The Office has tons of pranks. Do you watch it?

I saw this on the show "The Office":
One character put a few nickels in the telephone receiver of a co-worker, just a few every day for months. Gradually, the coworker adjusted to the weight, not really noticing.
One random day, he removed all the nickels. Then he called the coworker as he was walking into the office, making him rush to the phone; he grabbed the phone, and damn near knocked himself out bringing it to his head; he had adjusted to the weight.
Hilarious.

I work in an office and one time I took my co workers keys to her car and moved her car from her parking space. Then I had one of my friends call her and tell her that they were calling from a bank and her car was reposed She believed it! Then I had to fill her in. I thought it was funny. She didn't get mad either.

Plan it to where as everyone call in on that day. A prank of course but i'm sure it would cause some chaos.

pour burbon in the coffee pot

One year, we all one by one handed in our resignations. The boss didn't catch on because she was so worried that all her staff was leaving and how to replace them. Finally someone clued her in. She wasn't too happy though.

Call everyone else in sick except yourself, and then be the only one to not show up.
or do like Jim on "The Office" and encase everyone's belongings in jello molds.
