IF so, why are these considered racists and what is the basis of such hyper-allergicity to such comments (this is for a college sociology essay- real answers preferred)?

all these foods were what slaves in the southern states usually ate. chickens (also known affectionatly as "Yard Birds") were plentiful and cheap, as was the pork grease used to fry them in. chittlins are pig intestines and as someone already stated the slave owners ate the best of the pig (pork chops, ham, etc.) and the leftovers were given to the slaves. since pork and beef were a luxury to a slave, they used everything possible including the intestines. shortnin' bread is simply flour, water, maybe cornmeal, that was fried. again inexpensive and plentiful. and slaves actually brought watermelons to this country from africa, it was a little bit of home and grew very well in the humid climate of the deep south.
i think these images bring to mind pictures of happy slaves, working and singing on masters plantation. slaves were often depicted by white slave owners as happy to be owned. posters, flyers, and billboards of slaves fishing and eating watermelon (almost picnicing) were common in northern states, a type of propaganda against those who opposed slavery. "see how happy they are, how can slavery be wrong?!"
i myself am not in the least bit offended by any of these images. i am black, was raised in southern virginia, and lived off the foods mentioned above (except the shortenin' bread. thats a little too 1880's!). but everyone i know did, black and white. i realize where i came from and the circumstances my ancestors went through, and i'm proud to embrace my heritage.

Dark meat from the chicken and innards (chitlins) from the pigs were what African American slaves typically ate. The white people ate the better stuff. But thankfully, they made the stuff taste good, which is why it's still eaten today. Watermelons were just readily available in the South.

i'm England-depending and white. i do no longer devour melon of any type. I do like fried chicken yet would not devour it too typically as i do not imagine this is that reliable for you. I also evaluate your question somewhat close to to the knuckle i.e. close to to the reduce of propriety.

The same reason why enchiladas, guacamole, and beans are associated with Mexicans. It the type of food they eat.

Good question. People can be rude and ignorant. Many blacks don't like all those things, just as "others" and their stereotypical foods, habits.
