is it hard to remove the fan from the evga gtx 8800 to replace it with the water cooling thingy?

and which water cooling unit is compatible with the nForce 680i sli mother board & the gtx 8800 evga ?

I'd go with the danger den blocks, will ost more, but you'll get your money's worth.
Its easy to do, four spring mounted screws is usually all it takes, i would do it when the card is warm, like leave your PC on, shut it off and then do it immediately, this will make the thermal compound between the existing heatsink and the core easier to work with and the heatsink will come off easier. Sometimes the ram has thermal tape on it and might require a little force to get off, you can use a razor blade or exacto knife to get those loose.

i have had that take position. i'm guessing you used the Nvidia overclocking application, because the BIOS does no longer have a "attempt" button. purely press the flexibility button on your workstation (and, if the workstation many times asks you what to do once you press the flexibility button, press the r button after that, for restart. once you reboot, your settings will be lower back to generic.
