It depends on what you want. Almost all of the good downtown hotels offer packages for New Years Eve. Being on the River Walk is great on New Years! The Radisson Hill Country resort usually has a good deal.

Find a relative or friend who lives out in the country and pop fireworks like you have never before.
Or, you could probably find plenty parties around the clubs/dance halls.
