On a number of occasions I have seen this all white, very large (twice the size of normal one), butterfly around the tropical dry forests on the Oaxacan Pacific coastal plain in Mexico I can't find it on websites. It's so large it looks unreal when it flies, like it's attached to strings. Can anyone help?

Its called a White Morpho (Morpho polyphemus polyphemus) . Aren't the great? Here are some photographs of butterflies my husband took in Mexico. If you scroll down the 4th one is the Morpho. A friend of mine calls them tissue paper butterflies.

There are many large white butterflies in that area of the world.
Here is an image of a checkered white, maybe its that, I will also include a page of white butterflies that you can have a look at.

I have seen it near Puerto Vallarta. I would assume its the same one but im no expert. I have a picture of it on webshots. http://community.webshots.com/user/steffendd (birds)
Yes, its stunning when you see it flying around! It was up in the hills both times i saw it, wooded areas, away from the beach.
