does it just mean, they can't pig out on junkfood?

I'm not sure that it isn't literal, at least in some instances.

A former student of mine is currently enjoying tremendous success as a young inegenue-type in big-budget Hollywood films. I had a chance to chat with her not too long ago, and she mentioned that the Powers That Be at the studio actually specify what her weight should/must be, even to the point where they pretty much TELL her what she can eat and what she can't.

Chalk it up to "the price of fame"...

I think "because of their jobs, they can't eat" is a tongue in cheek expression because most actresses are not working, if they had to feed themselves from the actual compensation that they received from their employment in the industry they would literally starve to death.

It usually means they can't gain weight. But I think many anorexic actresses use that as an excuse these days.

id bet you anything that some DO go days without eating. it would probably be easy too because they are rich and famous and have other things to worry about besides eating...its sad really

They just say that because they don't want to admit that they want to be super thin.

not exactly, but they usually do have strict diets depending on their role in a movie.
