My furnace was installed with a filter 16" x 25" x 5" and it says MERV 8. I bought a replacement filter (same size) but it says MERVE 12. Is that okay? What is the difference?

I'm looking for replacement furnance filters also and doing research. The higher the MERV number the better (and more expensive) the filter : it filters out smaller particles (like dust and spores). Your MERV 12 filter will do a better job than the MERV 8 your furnace came with. It will do just fine.

Supposedly better filtering quality. Merv 12 should filter down to a smaller particle size.

It is Okay. Very very little difference.
12 Merv is the width or thickness of a object it will stop.
8 is smaller then 12
