Israel is a country that contains Jews, Arabs, Europeans, Americans none of which are necessarily Jews. Don't be kidded by the statement that Muslims love Jews. Not so! In the Quran there is a section called JIHAD in which certain suras (chapters) say that Muslims should not associate with either Jews or Christians because they are essentially evil and non-believers. Israel is a nation that contains many different types of Jews. Many are not religious but believe in God. There are many who are extremely orthodox with one kind of belief and there are many who believe that Israel shouldn't be the home of the Jews until the Messiah comes. Many believe that Israel must fight back whenever provoked, but there are many who believe that a peaceful approach is the best way to make peace with the Arabs.
Since Israel is a democracy like the USA all of these opinions find their way into the government which at times makes it very difficult to arrive at a conclusion as to the proper course to follow.

Israel is a country. It's a physical place you can go to. Jews are a race of people that live there.
Iran (and many other Muslim countries) do not like Israel because it was essentially plopped on the Gaza Strip (Which is the Muslim holy land) after WW2 when the world needed somewhere to put the millions of Jews freed from concentration camps. The Muslims object to a non-Muslim country being put on their Holy Land and this land is essentially the cause of most of the animosity in the middle east. That is why/how Muslim leaders & nations can say they love Jewish people but they do not acknowledge Israel's (the country) existence. They believe that land belongs to the Palestinians.
Hope that clears up some of the confusion.

Israel is a state, Israel is a nation, a Jew is a follower of Judaism, and a Jew can also be someone who is of Hebrew lineage. These can all 4 be separate, or they can all be together. You can be an ethnic Jew in Israel or living in the US, or you can be a religious Jew in Israel or elsewhere. You can live in Israel without being either, or just one, or both.

the real reason is because Israel is the envy of many peoples in the middle east because of the Temple Mount. It is the holiest of the holys and they all think they have a birth right to it. This has been the reason they can't get along for many years now. Ahmadinejad probably wouldn't care if the Jews were alive or dead as long as he could get his hands on the holy temple.
Much blood has been shed over the years for this very reason.
It's a holy war.

Judaism is a spiritual roadmap to God, just like Christianity and Islam.
The ones who fight for the cause of Israel are known as Zionists. Zionism is a political idealogy, based on athiest perceptions.
Please note that the holocause conference in Iran was attented by several Rabbis. Those Rabbis are not Zionist Jews. They are mostly Orthodox Jews.
