It's called a patronus, and it happens when you use the spell "expecto patronum", it protects you from the dementors. each person's patronus is different. Harry's is a stag (deer), because his dad could transfer into a deer. other people's patronusus:
Dumbledore: Phoenix
Hermione: Otter

Harry's takes the form of a stag (deer) because it is the animagus his father was.

because it's just a spell that gets rid of the dementors, and the animal that is produced by the spell is different for each witch or wizard. in book 4, harry teaches his friends how to do the spell, and hermione's looks like an otter.

That's called a patronus and each person has their own, individual "protective patronus". If you read the book you'd understand this. Harry actually has the same patronus form that his father used to turn into when he would become an animagus. I highly recommend that you read the books - they're very good.
