there seems to be a correlation between the sound of the flies and an imminent death that is about to happen. Is this a directors gimmick, where did this come from?

Flies buzzing intimates not only that Death is present, but that Death has been here for quite some time...

Films can't show you smells, but when you hear a fly buzzing...
You can guess what that scene might SMELL like...

Also, to create an ambiance about the scene. Example (but not limited to) They may use the sound of flies to indicate to the viewer that the weather in the scene is 'hot or smelly' or that 'death is nearby'.

well... flies feed on dead bodies, that's where i'd think it's from

never noticed....maybe you have been watch poorly recorded movies.
