It was Victorian Edwin Flack in the 1500 and 800 metre field races in 1896 in Athens - although it can be debated because Australia wasn't even officially a nation back then. He wore his school sports uniform because there were no official colours.

Edwin Flack, as stated by previous answerers. This is just in response to Cecily. Australia did have an Olympic Comitee (Oz is one of the IOC founding countries) and participated in the Athens Olympics in its own right.
