My guess is we will all die off long before we have a chance to evolve, as there are so many ways that all life can get wiped off the face of the earth (natural and non-natural).

These are not mutually exclusive processes. For example, it is possible for a genetic variation to occur that will spawn a new species. To make it more plausible, pretend there is an island and a few humans are stranded there and not found for many generations; during that time they could evolve a new species, while the origin species living in the rest of the world could be wiped out by a plague.
Chances are we will eventually die off without creating another species.

The die off part is impossible to predict and there is no selection pressure, allopactric or sympatric speciation going on in humans that I know of. So I can not answer the second part of your question, either.
