Understand that you are under no obligation to reciprocate the teacher's very generous gift, especially assuming you make much less than she does.
If you get along with her, a lovely card expressing how happy you are to be working with her, along with a small gift, should be appropriate.
My mother is a pre-school teacher, and she gets enough chocolate to choke a horse and enough bath and body stuff to bathe a horse forever.
A gift card to Barnes and Noble is always nice, as is a nice bottle of wine (if she drinks).
Another idea is a gift certificate for a manicure and pedicure.
Teachers spend so much time on their feet, and work so much with their hands. It's nice to be pampered every now and then.
A home pedicure set, along with a pair of comfy slipper socks (Eddie Bauer has amazingly soft ones) and a tin of nice tea or cocoa and/or a candle would be a great "winding down" theme gift.

I answered another "teacher Christmas present" question a while ago, and I thought of something like a personalized organizer. You can find some neat things out there. Being a teacher, she probably needs to stay organized with appointments, parent/teacher conferences, etc., and I think an organizer might do the trick!

A Christmas Ornament that you engrave on the back side with your name and the year ... some school supplies (for the ones she always seems to not have enough of if it is appropriate), maybe a new desk calendar ...

a teacher eh? a teacher would like something true of love and care. buy him or her a card filled with your love for her as a student or assistant! teachers have helped you through your life! buy her smething that will relax here from the tension she already has!
