Go to the Dollar store and go wild.
Get the girl a diary, some fancy pens/markers, puzzles, bracelets/necklaces, craft supplies (like beads, paints/brushes/paper), cards, some hair accessories, lip gloss, socks, candies, bubble bath, bath bombs, scented lotion, etc....
For the boy, get him a diary, fun pens/markers, toys (cars/planes/toy soldiers, etc..), socks, keychain, puzzles, craft stuff (paints/brushes/paper), a hacky sack, flashlight, bubble bath, bath bombs, candies, cards, etc..
Just some ideas. Once you get walking through the dollar store, you'll discover things you hadn't thought of.
Have fun with it and personalize the stockings with what you know about them.
ie: if their favorite snack is popcorn, throw in a couple bags, or if they like to read, get them a gift certificate from the bookstore (or a book they haven't read yet) or gift certificates for the movies.
Ask your boyfriend about them and what they like. Even if the stockings are a surprise, you can ask without making him suspicious. Say you read an article/saw a show about kids and what they're into now. Is it true? Are his brother and sister into X or Z? What do they like? etc...

the 12 year old get her something girlie a cool diary a clairs gift card or some jewlery hair ties a cd player you can get them super cheep now a days a 8 year old boy would also enjoy that. puzzle books hand held games like poker or something in that nature also u can go to a dollar store an pick up some weird things for em

Think about the stuff you got in your stocking when you were little, and ALWAYS put in a lump of coal also, because everyone is bad at least a little bit. Little cheap toys, nuts in the shell, an orange in the toe, a small wrapped gift. Lip gloss, yo-yo, deck of silly cards. I have made stocking that cost more (a lot more) than a real "gift" Have fun with it.

lip gloss, chapstick, toiletries that are appropriate for a 12 year old girl like maybe some nice facial cleanser or lotion, nail polish, some candy, gift certificate for a CD or DVD, pens, art supplies if they are artistic, cute socks/underwear. My mom always adds a cheap tiny box or jewelry box and she folds up some money and stuffs it in there. My mom puts in $50+ but you could put in $5-20 since they are kids.

I have a eleven year old girl and she enjoys things like chap sticks, gum, earrings, and other small things. She loves olives so she gets a jar of olives. I have even put story books in her stocking. Each year I put a very special gift like a locket or something special.

If they don't already have them, get them each one of those little electronic games called 20 questions. These things are uncannily accurate and everyone I know who has one finds them fascinating. Cans of Silly String are always fun. Puzzle books like Sudoku. Personalized anything....pens,pencils,key chains,etc. Bookmarks and bookplates. Scissors that make a patterned edge. Glue sticks. Tiny digital camera key chains. Speaking of key chains...there are tons of key chains available that have games attached. Pens also available that are games like Operation and Etch-a-Sketch. And Candy...the more the better....no one is too old for candy!

Go to the Xmas candy isle in any store. Go to the section of toys in Walmart which are like 1 dollar. Buy a book or a DVD. Gift certificates.

girl: earrings, socks, little journals....my mom always got us 'cool' school supplies, pretty much the little things you see at target. hair acssories...you can never have enough! i got a feather boa once...i loved it. never really wore it, but it was a nice decoration in my room.
boy: 'gross' things. playdoh, cars, bugs, stuff like that. a little handheld game (ya know, save the sanity of the parents...he'll sit there for hours...dont forget batteries)
and a special candy cane...a bigger one that isn't just peppermint...harry potter bertie botts every flavor beans. and maybe since its a big stocking, maybe a dvd for each. like, fox and the hound for the boy, and a cheetah girls movie maybe?
paperback books are always good. another thing that will keep them busy over break.
