When you put food in the gerbil's dish, it's his and he knows it's his. He can have it anytime he wants and it'll always be there. However, if it's not already there for him (like when you give it to him by hand), he doesn't want anybody else to get it before he does, so he grabs it up quick. Kind of like the way you'd rush to get something that's selling out quickly at stores, but you won't rush to the mall if you already had it. Y'know?

It's a good thing, too! If he didn't know and trust you, he'd hesitate taking it from your hands. So this is both natural AND a good sign! :)
