OK...given that both NICs are gigabit NICs, and the cable is a CAT6 cross-over cable, what is the fastest speed that will work?

If both NICs are Gigabits and you have a Cat6 Crossover, then it will connect at a gigabit.

If even one nic is 100 then you'll only connect at 100. You connect at the slowest speed on either end.

If you have two Gigabits and only a Cat-5e crossover, you'll still connect at 1000 but it will be very sluggish. Cat-6 is just a higher-rated cable made to handle the higher bandwidth.

Your question refers more to duplexing than speed though.
