Make gingerbread houses but use graham crackers instead. Have the kids each bring in a box of graham crackers and one topping. Then share.

When my first son was in third grade, they didn't celebrate anything. It's nice to see the non-holiday winter trees project is finally getting kicked to the curb by at least one school system.
Well, if you're doing winter holidays, try the Dreidel game. Spin a top, win or lose counter chips or M&Ms, and teach about other cultures all at once. You can put kids into groups of 4 to 6 to play.

Decorate paper gingerbread men with glitter glue.
Decorate REAL gingerbread men or sugar-cookie men.
Have a Pinata party -- pinatas are used for La Posadas, and anything which involves a stick and candy or small toys is always a great idea.
This below is meant for K-1, but the lesson plan is still useful to glean ideas for Grade 3:

good luck and happy holidays!

Play Dirty Santa! If ya don't know what that is then have them buy something 2-5 dollars or just something they already have and wrap it up! Then bring it to school and one at a time a kid will pick a present and hold on to it! The next person can either get another one or get the same one that person before them got! Keep going untill everybody has a diffrent present than they started out with! THEN OPEN UP! THts what I did in Last year and it was so FUN!

Try those paper snowflakes that you make with the folded paper with the sliver of paper cut out then you unfold it...you know. Make them pick up all the scraps and then give them a condy cane or something for a spotless room. Or those reindeer made from the two paper clips and the little red fuzzy balls. I'd just try and go to the local craft store and pick up one of their freebie magazines and look for ideas there. Or just ask the manager or some one else nice there for ideas.

Designate one person "the Christmas tree," and the others "decorators". Each decorator has a bag full of ornaments, lights, etc. (any tree decorations will do).
Give each team 5 minutes to decorate their "tree". When finished turn off all the lights and plug in Christmas Trees. Take pictures!

One idea I've seen is: buy a bunch of different gifts of equal value (unwrapped) and lay them on a table. Assign each student a number (1-whatever). Whoever has #1 goes first and choses whichever gift he/she wants. Then #2 #3 and so on. Then when everyone has a gift, mix up the numbers and redeal again. Then #1 can "steal a gift if he choses and so on.....
