I've lived in the UAE. As far as food in conserned you are in for a treat. The most common thing is the Sharma. Its a little bit like a Greek Gyro but better. This is pita bread with sliced lamb beef or chicken( never pork). These places usually also serve a falafil which is a vegatarian version of a sharma. Instead of using meat they use chick pea rolls. The Sharma is known as a Kabab in Turkey.
All Arabic foods are prepared with Halal meat. This means an Islamic player is made before the Animal is sloaghtered.
Indian and Pakistani food is plentiful in the area. The most common dish is Chicken Byrianni Or Muttan Masala.
You can also get Tandoori Chicken and Chicken Tikka

You can opt for the ubiquitous tikka and rice - but choose the saffron rice. Hommos is a staple, as is tabouleh (salad of chopped mint, parsley, tomatoes, onions, etc.) Fatoosh - another type of delicious salad. Labneh - cream cheese of sorts and mutahble (I know I spelled that wrong) which is a eggplant dish similar in consistency to hommos and a bit different in flavor to baba ghanoosh.
All of the above can be eaten with Lebanese (pita) or Turkish breads - and they are all delicious. Try Arabic coffee at the end of the meal - it's made with cardamom and it's heavenly.

My Fav Is Toushka, it is a quick snack made up of Cheese And Meat wrapped up in freshly baked arabic bread. The Second favourite in a snack is Sharwama, it is the local freshly grilled Chicken or meat sandwich.
My Fav Main Course are Kebabs, all the different types that is the Afgani, Jhelo Kebabs, Irani Kebabs and the other favourite is Arres ( in which they grill fresh Mutton between two soft pieces of arabic bread)
All This is served with Hummous, Garlic Sauce, or Mutabbal
