I am trying to date an Israeli man, whose parents live in Israel
I am wondering if they are very uptight in their jewish traditions, he doesn't seem to be. please help

If his parents were so conservative to object him choosing his wife, then you would have no chance of dating him anyway. You'd probably never even have an opportunity to meet him, since he'd be studying Thorah in his Yeshiva all day long.

So I guess you don't need to worry.

There is a wide range of observance. Some are very strict others consider themselves Jewish but are agnostic. Being in Isreal many are Zionist but not religious at all. It will depend upon the family. Ask him to find out how they practice. Many Jewish families don't care if the new fiance is observant but do take exception to a non-Jew. They may have a problem with that altogether so be prepared. It would help you if you had a chance to study a bit. Not only will it help you appreciate the customs and practices but can help prevent you from faux pas.
