why are you writing a poem for her in the first place?
don't put love anywhere in it, if your smart. you'll scare her unless you've been dating a while.
try taking something she likes or you like about her and just describe it. if she doesn't appreciate the effort too bad.

well, the courtly love poem, was usually about unrequited love, or a love affair (adultery).
seems like you are going to write a poem about longing.
