To give you some idea, here are some I enoyed:

House of Leaves
The Ringu series
Dark Water
Midnight in the Garden of Good and Evil
The Historian
Sunshine
Hell House
Chocolat
American Gods

Either books with passages that are beautiful and make you think, or some spooky novels (please no "Ghosts of New York" types though)

Since you mentioned American Gods, I'd have to say anything by Neil Gaiman. Have you read Neverwhere? It's about the world underneath London.

Coraline, while a children's book, is most definitely creepy. It's a short chapter book, but if you like spooky things, you might enjoy it.

I wrote a book that's beautiful and will make you think. It's a Little Prince-ish children's novel: The Caretaker of Tree Palace. My web site has more about it: www.cdawnmccallum.com

Some really beautiful books I loved that made me think:
The Alchemist
Graham Greene's books
Lawrence Durrell's books

Try "Sharp Objects" by Gillian Flynn and "We Have to Talk about Kevin" by Lionel Shriver. Both are very scary and make you think.

"The Ultimate HitchHiker's Guide" by Douglas Adams. i guess you'd call it sci-fi but it's incredibly funny.
