Looks and smells.

The brain initially decides by the memory of the taste, its smell, its after taste. Associations with the event of eating/tasting the food is secondary. But generally, if you're really hungry it's the smell that triggers a memory of the taste of something.

The smell has a lot to do with it, if it does not smell good I will never taste it.

I would have to taste the food,because liver and onions smells good when it is being cooked, but it tastes disgusting.

I eat a lot of Korean food. i stopped asking after a while. a lot of it smells like doo doo, but it tastes good.

I've never been put off by the way food looks, but if it smells nasty, I might not want to put it in my mouth.
