I cut mine into medium size chunks put them in a cast iron skillet with butter and i cook them until they are browned then i put brown sugar over them and cook them on low until the brown sugar becomes a thick syrup. The kids just love it.

There are 2 ways I've tried - both successfully. The easier of the 2: stab the sweet potatoes with a fork a few times, put in the oven at 350 with a cookie sheet under them in case they drip, cook for an hour or more, take out, cool enough to touch them, slice open and scoop out the delicously soft insides.
Other way is to peel them with a veggie peeler, cut into pieces, put in a pot with some butter on low heat and cook for about an hour or so. Mash with milk or cream. Add either: salt and pepper or cinnamon.
It's actually really hard to mess these up. Err on the side of cooking longer so there's no hard pieces - yucky!

they get sweeter and the flavor gets richer with long cooking or cooking them 2x.
I pop them in the microwave until they are soft. After they cool, I take the skins off (do not try to peel a raw sweet potato unless you have a high frustration level), cube them and put them in the slowcooker with butter, brown sugar and a little brandy. They cook on low for 4-6 hours.
Not only is this the best way to cook sweet potatoes, the leftover makes the absolute best sweet potato pie in the world (I have independent verification for that).

When I buy them, I buy the garnet (they taste better and have a darker inside) and I buy ones which are approximately the same size (for even cooking time -- a skinny long one and a fat round one cook completely differently . . . pick size and shape based on the sweet potato you liked best from the bin).
Well, I scrub the dirt off, clean them with a good rinsing, and stab them with a knife then rinse them again. I wrap them in aluminum foil and bake them in a 350 F oven until a knife goes through them easily (they should have the consistency of a baked potato when poked with a fork).
Then we unwrap them, split like a baked potato, salted, peppered, buttered, and brown-sugared. I have a really great recipe I made myself for holiday sweet-potato casserole which is easy and not squishy. I like my potatoes a little firm because sweet potatoes are moist, not floury.

I cut them up into a cake pan. About 5 pounds. Then I cut up about 1 and 1/2 sticks of butter in it. Then I put about 3/4 to 1 pound of brown sugar on. Then bake at 350 for about 1 to 1 and 1/2 hours. I'v not officially ever timed this. Then when you can insert a fork into a piece easily, put mini marshmallows on top and bake alittle longer. Not too long or you will burn the marshmallows. Like mabe 15 min or so. Just check and when you have a few light brown spots on the marshmallow, its done. Pretty simple. Well, there are a variety of ways, heres the two I usually use. If I don't want them candied ( with brown sugar and marshmallows) I just scrub them off and bake them like regular baked potatoes ( make sure you poke them first, they WILL explode in the oven otherwise!) Depending on the size of the sweet potato, they will take about an hr- hr and 1/2. Then I just put butter on them and eat them like a regular baked potato. If I want to candy them, I begin with the baking ( as above) but only bake them for about 1/2 hr. Then i take the skins off, cut them into servable size pieces,put them in a caserole dish, put butter and brown sugar on them, cover with foil and continue baking till soft. Then I add my marshmallows at the end and stick back in the oven for a few minutes to melt. If you put the marshmallows on too soon, they will burn. I personally like to add just a bit of Mrs Dash in with the butter and brown sugar, but no one else in my family seems to care for that little bit of 'hmmmmmmmm, whats that little bit of other flavor in there'. Of course, you could always start with canned sweet potatoes too (faster, cuz you don't have to bake them first to begin with) but I think the flavor of starting with REAL sweet potatoes is much better!

I start my cooking process by throwing them away, This saves me the headache of cleaning the pot I was boiling them in because I forgot about them let all the water boil out burning everything to a crisp. Hope that helps!!! (Ohhh you can also bake them with marshy-mellows on top. Cut them into fries and deep fry them Thinka bout it--They are a POTATO anything you do to Potatoes you can do to Sweet Taters.

I slice mine in wedges about the size of home fries. Then I boil them until they are a little soft, take them out lay them on a cookie sheet sprinkle brown sugar and a little Cinnamon on them then use spray butter and spray them bake until soft (about 30 minutes on 375).

I boil mine for an hour then let the cool off for about 2 hrs, peel off the skin add butter, milk, brown sugar, vanilla, Cinnamon and nutmeg blend them then top them with pecans, marshmallows and honey bake it for 30 mins. I call it Sp casserole.

I poke holes in them and pop them in the microwave for a few minutes. When a knife runs through them easily, I pull them out and put brown sugar and butter on them. Super easy and super tasty!
