I haven't found much true chick lit that I like. Ann Dayton,Patricia Gaffney,Adriana Trigiani, and Kristen Billerbeck aren't bad. Penelope Stokes is great, but I am not sure she qualifies as a chick lit author, although her books are geared toward females.
Why not try some historical fiction geared toward females? I loved The Joy Luck Club by Tan, All the Way Home by Tatlock, Rebecca by DuMaurier,The Shunning by Lewis,Women of the Silk by Gail Tysukiyama (sp?) and Christy by Marshall.

I second Meg Cabot. Her stories are more for teens, but they're funny and refreshing. Warning: after reading 5 or more of her books in a row, you might want to try something a little more serious to settle your brain.
but seriously, I laughed SO much when I first read Princess Diaries.

Meg Cabot. She writes the Princess Diaries books for teens, but she also writes adult chick lit. Her characters are fun and her books are funny.

jennifer crusie. i think she's hilarious. and nora roberts writing as j.d. robb writes decent mysteries (set in the future though, that was a little confusing for me at first) for the "death in" series, she also writes romances. and charleine harris writes good mysteries, i especially like her harper connelly series.
