Well we make turkey and dressing with giblet gravy for the main course along with baked ham, candied yams, green beans, asparagus and potato casserole, dinner rolls and a few other sides with apple, cherry, pumpkin and pecan pies and desserts such as Waldorf and whipped cream based fruit salads. But I suppose down in Mexico it might be refried beans and turkey tortillas, or in China egg drop soup and fried shrimp and rice with turkey chow mien, or in Saudi Arabia roasted camel tongue with a desert scorpion casserole and spiny lizard pie?

For you, a Victorian Christmas dinner:
http://www.biblicalquality.com/Christmas7.html
That said, I make a Tofurky or other meat substitute "roast", sweet potatoes (baked until soft yet firm then sliced with salt, pepper, butter, ginger, and maple syrup, then re-baked in a covered casserole -- very good!), mashed potatoes, bread, vegetarian gravy, and veggies. I used to make an onion-broccoli cream casserole. Then I make homemade pie and hand-whipped whipped cream for dessert -- usually pumpkin pie.
My own family used to do it up with roast beef or turkey, raw crudites, mashed potatoes, hot veggie sides, and a huge spread of appetizers. My grandfather made three pies each year: one pumpkin, one pecan, and one mincemeat. At breakfast each Christmas, we would have Stollen, a type of German Christmas bread with candied fruit in it which tastes like Gummy Evil.

For my family it is a turkey and ham dinner. We also have mashed potatoes with gravy, stuffing, peas, carrots, turnip and dinner rolls. Sometimes we have pumpkin pie, ice cream and other little sweets, but usually we are too full. Oh and we always have cabbage salad and tomato juice.

You can re-do Thanksgiving dinner, or you can take the opportunity to branch out. Regular dinners may be a ham or exotic birds like: quail, duck, goose. It's also OK to try something unconventional like Thai, Indian, or whatever you fancy.

Well, back when Jelly Jam Jar Johson was alive, we would fix Crawfish stuffing for the turkey. It's delicious!
