During this time can you take a sick day?

Basically it means you can't screw up. It gives the employer time to see if they like your work, ethics, attitude, etc. If you are not a good fit for the company then they have the right to let you go. After the probationary period is over, you become a full-time employee with all the benefits.

You can take a sick day but it's not advisable unless you are deadly ill. It will look bad to your employer. During this probationary period you want to put your best foot forward! Be on time, everyday. Work hard, have a good attitude, and be thankful that you have a job!

you can call off sick, but you wont get paid for it. the 3 months just means none of your sick days/personal days/vacation days or insurance will kick in until your 3 mo's is over. Most companies do this so that they know they can rely on you and you're not just working for a company for a week and then geting paid to take a vaca. You need to work for it.
