"carrying one's own water" means the person is self-sufficient and capable of doing difficult, but necessary tasks on his or her own.

Yes, I can carry my own weight or water, means I can take care of myself, I am selfsuffcient, I can pay my own bills, help with chores, etc.
But there is also a saying that "that doesnt hold much water" meaning that isnt factual.

Sorry.. that is not an "expression" persae.. I have heard... "I can carry my own weight" which means of a task of some kind.. in which several individuals might be involved and each one has a certain task to do.. You can say.. not to worry.. I can carry my own weight meaning that I can do my part with no problem

I haven't heard of it, it could mean that one can carry what one needs to stay alive. This could be said in deserts, where one cannot live without water.
