Talk to your tutor. Is this HND?
you may hjave some other proof, wage slips, records from your work place.
How close to your 300 hours are you? I've included a link below for a place where you can volunteer for a week or two. You don't get paid but you do get your hours signed off.
Do not forge signatures - it's not just getting thrown of your course, it's fraud and your tutor would have to call the police if they suspected you had forged signatures. That means a criminal record, will of course shows on your CRB check.

Among those things required to be a professional carer, responsible for other people, are honesty, commitment and CONSCIENCE!!!
If you can't demonstrate them, you are proving you are aiming for the WRONG JOB!!!
Your first priority should surely be to see your Personal Tutor, responsible for you, because if you have genuinely done the work, then he/she has to sort out the paperwork (and your relationships with work-based supervisors and assessors) on your behalf.
As it is, this is your ONLY choice, because, as you admit, you have failed to do ALL of the required hours anyway - therefore need to negotIiate a solution.
If this is an NVQ course, then extensions are often permitted. People, after all, do get sick, and occasionally have problems. It isn't the end of the world. Tutors do not merely 'police' these courses, they are there to help you in your professional and PERSONAL development. All you have to do, is to be mature and sensible enough to seek advice.
And, by the way, you don't just "do" care courses - you have to BECOME a professional carer. And you do that through proving yourself, and developing your skills - in the workplace. It takes time. And it takes both patience and work. You're not going to have much pride - or competence - in your career if you had to cheat and lie in order to get into it, are you ???

You need to tell your tutor that you have put in most of the hours but your placement wont sign them , that way your tutor can ring up to verify that you have done it or most of it and maybe give you some extra time to gain the hours experience needed.

have u requested a meeting with your tutor to try and see if he can help get the place where u did you work experience to sign the hours off? if you have i suggest trying to do ithe experience again somewhere else over the xmas hols and get it signed off then.

you should go back to your work placement and say how it will affect you not signing the papers if they still dont sign for them take them to your tutor and explain i am sure that your tutor will do the best they can for you. if not sign them yourself lol they never checked up mine but i didn't sign them my work placement did.
