I have an education, 2 degrees, and a good job, my employers policy is that until you work 120 days you don't get holiday pay for working holidays, but yet they pay their other employees holiday pay even if they don't work on the holiday.

Sure, it's legal, unless you have a contract or collective bargaining agreement that says they will.

Yes it is legal. There are no laws stating that an employer has to
pay a premium for overtime.

That having been said, there are exceptions. If you work for a
company such as Boeing, who does work for the military, they
and their sub-contractors must pay time and a half for time
worked over 40 hours in any given week.

Yes, he only has to pay you overtime for hours worked over 40.
If you do not like the situation, get an education and a better job, or start your own business.
