The peptide bond between the two amino acid residues has to be hydrolyzed, which means that when the the peptide bond is broken one molecule of water is also broken into OH and H.The former joins with the carboxyl end and the latter with the amino end of another amino acid. This can be done by heat and preferably by a peptidase. You may call this reaction hydrolysis or proteolysis.

A dipeptide is two amino acids stuck together. When they are combined in the first place, a molecule of water is produced (a condensation reaction). When they are cleaved (there are a number of enzymes that do that, but specifically the group of dipeptidases can do it), a molecule of water is combined in to the 2 amino acids (OH to one, H to the other) in a hydrolysis reaction.
