The evaporated water becomes water vapour and rises because it has got some molecules in the excited state and gets free from the adhesive forces between the water molecules and escapes....
You have a wrong perception of the water vapour escaping...Imagine if gravity did not act on any of the gases then we will be left without anything to breathe... but that is not the case.. the earth gravity is also responsible for keeping an atmosphere around it....
In Earth due to it's gravitational field the escape velocity is 11.2km/s..i.e. for any object to escape the earth atmosphere, it must reach a velocity of 11.2km/s to escape from the gravitational field and only the rockets that we send have been achieving these velocities to escape the earth's atmosphere.
Gravity does not essentially mean sticking to the ground.. and not all the air reaches the top.. the most concentration of the air is upto 2kms and above which the concentration is very low and you need oxygen masks. Can u guess the reason??? It's gravity.. thanks to mother earth..

First of All Know this dear that gravity is pull of earth by which it attracts everything towards itself. and everything means everything
Now about evaporated water or steam.
first you have to understand that when water molecule becomes gaseous, it actaully gathers so much energy that it jumps from the surface of water.. and goes upward..
but actually it doesnt jump. it applies that energy to water and water as a reaction push it upwards. and it goes up.. and it keeps going up untill it reaches a position where all the molecules have same energy as this. and it doesnt go out of gravity pull. bcoz when downward push and upward pull are equal .. it become motionless in the air. form clouds..

The measurement of the influence of different gravity levels on the brain allows to explain how humans react to microgravity in space and to predict the adaptation capability of astronauts. Human electroencephalographic (EEG) signals were recorded during low and high gravity phases of three consecutive days of parabolic flights on the Caravelle aircraft in 1991. EEG signals were processed, using the method of correlation dimensions d of chaotic strange attractors. Results show clear differences between the three flights, with a general decrease over time in the attractor dimensions, a measure of the brain response to changing g levels. However, the dimension is not a one-to-one relation with g levels, as additional variations are observed. Two hypotheses are introduced, the "fatigue/stress" and the "g stress" hypotheses corresponding, respectively, to long-term fatigue accumulated over the three flights, and to short-term fatigue in response to change in g levels. The former explains the overall decrease of dimensions, the latter yields additional variations on shorter time scales. gravity acts on every object, correct.
if you put a wood-piece in empty bucket, it willl be at the bottom, pour water in bucket, it will float on top of water in the bucket, coz water has more density than wood-piece ( u wud b knowing this for sure!), so there are two forces one is gravity and second is -boyancy on wood -piece.
same way when water evaporates it has less density than water & even surrounding air, so it lifts "above" like water was lifting wood-piece ; till it matches equal density air, because air is also thinning as height increases.
there it becomes part of cloud etc, then finally it rains on your & our heads!

any thing that has mass is prone to the effect of gravity.
u must be knowing that the mass of liquid water is lighter than many other gasses in atmosphere.so the vapoured water raises high and pushing all other heavier gasses down.
