Wow, you've got time on your hands. That is an interesting question, though. I suppose they just observed the young calf suckling off it's mother's teat, and logically deduced that since the teat of the cow protruded out and down that they could extract milk from it by applying a little pressure. When it turned out that the milk was pleasing to the taste, word got around, and it became customary to grasp the teats of female cows to wring out the milk for drinking.

Cow milking was discovered by accident in ancient times. It was first believed that you could communicate with the dead if eight relatives held on to the "handles" and thought nice things about the diceased. Butter was discovered shortly after milk.

Humans have always fed their own babies on milk from a teat, so I guess people observed calves suckling and thriving and realised that this would be a good source of food. So I would think they knew exactly what they were doing when they first tried it, but maybe it took a bit of trial an error to get the technique right.

cows drip milk from their udders and some animals (hedgehogs for one, IIRC) lick the drops.
