You need to be an adult link, with money to pay for riding and gambling, and you need to go back to the ranch and ask the guy there to let you ride the horses.

Then you need to pay money to race horses with him.

Then you need to race the horses, and pay the bets, while riding the particular horse you met and befriended as a child.

Longshiren pretty much had it, make sure that you go to the ranch after waking up Talon in the castle. Malon will teach you Epona's song, which only makes the horse follow you for now, but you cannot ride her. After becoming an adult, if you return to the ranch, the stable hand will now have control of it, and you need to ask for riding lessons. This is where you play Epona's song and she will come over to you, otherwise you cannot ride her. Once one her, go talk to the stable hand, and he will be shocked, since no one has ever rode her before (but yet they got the saddle on her, go figure, lol), and want to race. To win the race, just stay directly in front of him, no matter how slow you go, if you block him, its a snap. Once you win the race, he will tell you he wants to race again, and if you win you can keep the horse. So win again. Once doing that, he will not let you leave the farm, he will block the way. You can however leave by jumping, I once jumped over him, but have not been able to do it a second time, so the easiest way is to just jump one of the fences that lead to the field, and when you go back in, Talon is back in control, and Epona is yours =)

Whenever you get Epona stuck somewhere... Just leave that area (in your case, go to Hyrule Fields) & play Epona's Song. The game will teleport Epona a little distance from you. This works every time you get Epona stuck. Just leave the area, play the song to bring her to the new area... then you can go back to the previous area.
