Do you mean why do people have particular colors they prefer? If not skip ahead, if so read here...Many schools of thought on that one. Feng shui has one opinion. Personally, I find certain moods draw me more to one color or the other, this probably is related to results of some sociological studies the have been done, ie proof that light green is calming. In which case people prefer to surround themselves with a complimenting color, or put colors in the environment to encourage a certain attitude/behavior.
If this is interesting look up "color design and marketing" an internet search should produce some good articles...ever wonder why restaurants paint certain colors on the walls? believe it or not some colors actually seem to stimulate hunger!
If you mean color as opposed to black and white or other "monocolor" or tone on tone situations. the eyes (and Brain) are amazing, they pick up and analyze what we see and invariably our attention is drawn to the color that is brightest or most out of place... I practiced this in art class. The eyes and brain get bored of monocolor or very basic color schemes and are always looking for a focal point, when everything on a page is black and white the eyes and brain have to work harder to identify what is significant. Color is an easy way to understand significance because as humans when we produce art or commercials we often highlight (sometimes subconciously) what we want others to see most by use of color contrast.
After all of that, I guess the short answer is because we just do.

....whats the question? Why humans like colors? Studies have proven certain colors stimultate different feelings/emotions/senses in our brains.. thats probably alot of it. For example: Red can make you hungry
