Oh my Gosh, I don't know where to begin. I have been to Vegas I don't know how many times in the past two years... maybe 5 o so. Here are the things I enjoyed:
Stayed at the Aladdin Hotel...soon to be Planet Hollywood Hotel
Shop at Caesar's Palace,
The blown glass ceiling at the Venetian,
The fountains at the Bellagio,
The white tigers at MGM,
The clubs at the Palms (off the strip),
The M&Ms store on the strip,
Tour of the Hoover Dam,
The Spice Market Buffet in the Aladdin,
The atmosphere of Paris,
The food at New York, New York
and sleeping late on any day you don't want to walk up and down the strip.
Good shows to see:
Geroge Wallace - Flamingo,
Cirque du Soleil: O - Bellagio,
Cirque du Soleil: Mystere - Treasure Island
Nathan Burton Comedy Magic - Aladdin,
Prince - Rio,
David Copperfield - MGM Grand

See a Cirque show. O at the Bellagio is probably the most impressive, LOVE at the Mirage is the newest (and set to Beatles music!), Mystere at the Treasure Island is probably the best buy for the money.
Best new restaurant: Stack for steak & seafood at the Mirage. Yummy, yummy stuff.. but NOT cheap.
Best cheap thing to do? Visit the Bellagio. The fountain show out front is very cool, the atrium garden inside is gorgeous, and the lobby itself is considered an 'attraction'. And that's entirely free. If you want to add to the fun, see the Ansel Adams exhibit at their art gallery while you're there (for a fee).
Whatever you do, wear comfortable shoes, and don't break the bank. Remember: Las Vegas wouldn't have all those spectacular huge garish hotels if the casinos were losing =)

Las Vegas pretty much sucks. The only thing that's great about it is the shopping. Forum Shops, Fashion Show Mall. There are THREE Sephoras, right on the strip.
The shows suck; they're extremely pricy and short... and you won't be able to see crap because all the good seats will be comped to woo big fish gamblers. You will literally be in the back corner behind some middle age business traveler and his 21 year old escort.
The rides suck; you wait in line for 2 hrs for a 30 second thrill ride.
The buffets suck; you wait in a line for an hour, starving, and you have to push and shove to get fed. Also it'll be so noisy you can't even have a conversation.
Pretty much everything sucks in Las Vegas except the shopping. Did I mention Bellagio has shops, Venetian has shops and Aladdin has shops? Caesar's Forum Shops are awesome. But they're frigging crowded and designed to wear you out. There are no maps, and you literally have to pass by every store in there. So even that wears you out.

Shop at the M&M's store, Watch the Roman Gods come to life in the fountains at Ceasers, see the Elton John concert, Danny Gans is great. Check out poolside concerts at Bellagio. Ride a gondola at the venetian, see the parade on the ceiling at the Rio, Must eat at the Alladdin buffett and Canoletto's in the Venetian. Best shops are at Ceasers then desert passage. Grab a pack of matches from Alladdin, it won't be there much longer as it is going to be Planet Hollywood. Remember what happens in Vegas stays in Vegas!!!!

The best buffet is at the Bellagio. It's a bit pricey, but very good. Walking up and down the strip is fun, too. If you're from out of the area and have never seen the Grand Canyon, you can book inexpensive trips from Vegas to the Grand Canyon by bus, plane.

Personally I stay away from all the new Mega-Casinos. They don't get the "Mega" for being cheap. The more glitz, the more you'll spend for...basically anything.
Look in the newspaper for 2-for-1 coupons. They are abundant and always a good deal.
The smaller casinos are still a good deal, as far as food goes.
Try the Henderson Casinos they are always cheaper than Las Vegas ones.

The fountains at Bellagio, walk the strip or drive, travel to Lake Mead Recreational area, Hoover Dam, Valley of fire, Red Rock Canyon, Mt. Charleston. Eating...the list goes on: Gourmet restaurants, buffets, ethnic, etc. Delmonico at the Venetian, Prime Steakhouse at Bellagio, Buffet at Paris hotel, Top of the World, The Rio. Shows galore....Celine Dion. Cirque de sole, etc.

If you like buffets go to The Mirage buffet is really good, food's delicious and have a large variety, from American to Japanese.
See a show any Cirque Du Soleil show is worth seeing. The cheapest one is at th TI "Mystere" and it's really good!

There is a joker poker machine in NY NY that lets you re-bet in the middle of the hand...It's called double joker poker or something like that...Play that game. You will win. Beware of the guy blowing cigar smoke in your face trying to take your machine! New Orleans had an amazing prime rib believe it or not!
