Probably because the beauty of a rainbow is inspirational, similar to love, and a women of beauty. Very common topics for songs.

because they inspire wonder in some people. and most people have seen one, so it's something everyone can relate to. there's also a great deal of mystery about the rainbow; no one ever seems to be able to find it's ends. Makes for great poetry, and since songs are poetry put to music, great songs.
