Grammatical: He asked if she wanted to go FOR a walk. She replied simply, "I would love to."

Logically: What's so simple about "I would love to"? By saying she would "love" to, she's expressing a deep desire which required not only thought but conviction. What's so simple about that? What would be a complex answer? You're using the world simply just to fill in space, because her answer was not particularly simple.

My Suggestion: He asked shyly if she'd like to go for a walk. She smiled and replied with a simple "Yes".

This is how I would write it:

He asked if she wanted to go for a walk. She simply replied, "I would love to."
