You give him an ultra romantic evening. Buy sexy lingerie. Get a hotel room (and babysitter for kids if you have any). Make reservations at a romantic restaurant. Buy a new sex toy to have fun with at the hotel. Design it so that when he comes home, he finds and envelope telling him where to go. When he gets there, you're in your lingerie ready for a quickie before dinner. Take a cab to dinner so you can drink (if you drink) and then go out dancing afterwards if you like. When you get back, give him a massage that he'll never forget and end the night with a great climax for both of you. Giving yourself is always the best gift. :)

I have the same situation with my husband. He loves gadgets and computer things, and he has every gadget known to man - including a full-on "computer room" with several servers, 5-6 computers, and a home theatre outfitted with the latest projector and AMX touchpanels which he programs himself. Needless to say... buying him "gadgets" is out of the question! He also has a DVD collection which numbers in the 1,000s.
Here's what I came up with for this year:
A book he wanted; a fog-free shower mirror with a radio; a skin-care kit for men; a digital coin sorter (he leaves loose change everywhere); a nice polo shirt; an autographed picture of his favorite celebrity (from E-bay). In the past, I bought him souvenirs that had to do with his favorite movies/TV series (mugs, keychains), clothes, and things that have to do with the history of space exploration (an interest of his).

I would consider buying him mint coin. Get a coin with a year of significance for the two of you, perhaps your anniversary year or the year you met. The other idea is to get a proof coin with the current year. (You can do this every Christmas.) Place the coin in a red velvet bag for him to keep it in. He will treasure your gift.

You could make a book of "coupons" for things you'll do for him. (Use your imagination.)
Or try to think of things he likes having, but doesn't like buying for himself. Maybe clothes. Does he need a new winter jacket or something like that?

I would print out a gift certificate from you. Think of something he likes to do and offer him one free day to do it.
