Well they were far from home, hard to displace the natives, lack of manpower, some of the crusaders wanting to go home. This isn't based on any previous historical knowledge, but I think they are pretty valid reasons why a coalition of bickering states could not project their power more than 1000 miles away in any lasting way.

Principally because they failed to do the thing most occupiers fail to do, winning the hearts and minds of the population. They also couldn't really find anyone who wanted to stay there and maintain a strong enough military presence to prevent the Holy Land from being reconquered by a strong military and civil leader like Saladin. It isn't as though the Crusaders woosed out and went home, they had holdings of their own, that were threatened by other nobles and they also had families to return to. Consider Richard I and Philip Augustus as an example. The King of England had vast holdings in what is now France, The King of France was pretty much stuck in the immediate vicinity of Paris. If Philip goes home, with his soldiers, then Richard is going to have to leave pretty soon as well, or risk losing Normandy, Anjou (the ancestral homeland) and Aquitaine to Philip. As it was, brother John didn't manage very well while Richard was a captive of Conrad of Austria either.

They had control over a large area for quite some time, Crusader States called Outremer. The problem was they were invader/occupiers and as such were reliant on a constant flow of aid, especially military from Europe. When Crusaders came, after the first, they were under control of European kings and did not provide what was needed, especially when they failed. They were just very expensive to maintain and European kings saw no return on their investment.
