There are lots of ways to make "gingerbread houses" ...different materials can be used for the houses themselves, the icing to hold things together or add "snow," and the items you put on the houses to decorate with.

The first way is to buy a kit.

A second, homemade but easy way is to use graham crackers instead of real gingerbread (regular color or chocolate for a darker house).
The crackers can be put together with frosting along the edges to hold them together, or even over a form of some kind that's left in (a box for example... forms are good if you want to build bigger houses too).
If you need to cut graham crackers, a serrated knife used slowly works best.

If you want to use real gingerbread though, there are special recipes for "industrial or architectural gingerbread" which create pieces which are stiffer than ordinary gingerbread (still edible, but not as tasty).

For frosting or glue to hold the walls together, you can use store-bought frosting in a can (easiest, and what I usually use... can be colored too), or you can make stronger frosting like "Royal Icing" if you want it to be more like concrete when dry and last forever ("edible" again, but not very).
Frosting can be piped from an icing bag with a metal or plastic tip in it (cheap or expensive)... or just from a plastic baggie which has one tip cut off--twist bag tightly after filling... or frosting can just be spread with a regular knife, etc.
Use the frosting to glue on the decorations too.

If you don't want to eat the house, you can use other thick white adhesives like caulking or spackle or "textural paint," etc., or even plain glue.

It's best to start with a stiff flat base of some kind under the bottom of the house that's larger than the house (cardboard is fine but if corrugated, have the corrugations go side to side so when it's picked up from the sides, it doesn't bend easily).
Using a base makes it easy to move the house when finished amd to rotate when you're working on it ... it also gives something to glue the base of the house to, and creates a yard area which can then have other items like trees or snow people "glued" to it.

As for decorations, you can use edible candies, cookies, etc.... or you can use any kind of inedible things, if you don't want to eat the house later.

There are loads of lessons online on how to make gingerbread houses in all of those ways, and from simple to very complicated.
Check some of these for starters:

(You can also make gingerbread houses totally from other materials that are just made to look like gingerbread... for example: wood, polymer clay, sheet metal, foam core board, cardboard or boxes, etc., etc.)

Have fun!

I don't make or buy gingerbread, although it would be fun to do...I use graham crackers to build the house then put candy on it. We use cardboard wrapped in foil and then the kids can decorate the area around the house, making a yard. We use lot of different candy, licorice, red hot candies, m & m's, pretzels, marshmellows, candy canes (mini) and gumdrops...lots of others, use your imagination.... also I have a great recipe for frosting cement. It's works without holding it and is super sticky :) It's also very edible, so no worries there...

2 egg whites
1/2 teaspoon cream of tarter
2 cups sifted powdered sugar
food coloring (optional)

beat egg whites until stiff peaks form, then add cream of tarter until stiff. Gradually beat in 1 cup of sugar until well blended, beat for 2-3 minutes.

Can burn out your machine if not careful...do only one batch at a time. Do not get any yokes or this will not work! Good luck and have fun!

You can buy gingerbread house kits at most grocery stores. Making one from scratch is a big challenge for someone who has never done one. They are safe to eat.

You can easily buy kits in the grocery stores this time of year.... of course you can eat it unless you decide to use things you cannot eat just for the look of it. Then it would become a thing of display only much like those fake cakes put on display in bake shops.
