Usually a technician is certified, they have had formal training in a class over a certain period of time. An assistant has mostly learned on the job. Usually, depending on how much time has been spent on the job and how intellegent the person is, it doesn't matter. I was trained on the job and knew more than a lot of techs that were coming fresh out of classes and being certified. I worked for a couple of vets for over 14 years. It was the best job ever, I had to stop doing it because of back problems and have not since been happy in a job. I was allowed to do everything a certified tech could do because my doctor knew I was capable and trusted me and saw that I was just as good (if not better) as anyone who had professional training.
Both assistants and techs assist the doctor.

A Veterinary Technician has a two-year college degree & assists in surgeries & can perform dental cleanings. A Veterinary Assistant does not have a college degree & receives 'on the job' training, and basically assists the vets & techs, hold animals, clean kennels, & does other less technical jobs..

Both do essentially assist the Veterinarian, however the Tech does MUCH more in depth work, such as fecals, a urinalysis, parasitology, hematology, dentals, radiography, etc. They are trained and have a college diploma/degree, while Assistants do not. Thus they can perform more procedures, and some can even do minor surgeries (cat neuters, etc.).
