A rabbit's intestines rely on a delicate balance of bacteria. It's possible the fat, protein, or cheese mold from the cheese threw the bacteria off-balance. If this is what killed your rabbit, it would have died after a night, if not longer, and you probably would have seen diarrhea.
Rabbits are very sensitive to stress. If someone startled it, it could have had a heart attack or stroke, if it had a preexisting problem.
If your rabbit was an unspayed female, and there was blood coming from near her tail, she could have died from uterine cancer or something similar.
Rabbit viral hemorrhagic disease kills rabbits overnight. If someone in the family touched a sick rabbit recently, they could have given this disease to your rabbit.
Myxomatosis is another fast-killing virus. American wild rabbits carry the disease with no ill effects, and mosquitoes can spread it to domestic rabbits, which usually die from it. Your rabbit's eyes would have crusted over, and one or both ears would have swollen.
Rabbits often just die, for no apparent reason. When they feel ill, they hide it, because in the wild, looking sick marks them as easy prey.
If you decide to get another rabbit, wash down all your rabbit equipment--anything your old rabbit touched often--with bleach and leave it out in the sun for a few days. Wash all your clothes you wore when you held your rabbit. Hopefully that will kill any lingering viruses, and put your new pet out of danger.

Cheese is not good for rabbits (no, they are NOT rodents- they're langomorphs). Rabbits need a low-protein diet, and are very sensitive to intestinal/bowel problems. If a rabbit is given too much cheese, and has some pre-existing obstruction, it might have made him sick...

cheese only makes rabbits constipated. but constipation can kill if you let it go too long, which might have happened and the rabbit was about to explode but luckily for it, it died first.
