A large dinner has always been an integral part of Christmas and, until 1840, beef was the main dish. Then, huge numbers of turkey and geese were imported from Europe and the goose (which was cheaper and has tougher meat than a turkey) was the most popular. As turkey prices tumbled, it became the No 1 Christmas Day meat.

Cos they are a hell of a large bird that can go round for everyone. Any bigger and you would have to roast an ostrich. It looks good in the middle of the table, you couldn't stick a whole roast cow on there. Turkey is also reeeeeaaaaallly nice, who doesn't like turkey. As Joey on Friends said 'no phoebe, turkeys are stupid, ugly and delicious' = )

We don't. We eat turkey for Thanksgiving, but some kind of roast for Christmas. I'm doing a rolled pork roast this year, with a rice based apricot and pecan stuffing. I like ham or beef roast as well.
I usually buy a turkey this time of year because they are cheap, but I keep it in the freezer for a while. If you ever get a chance to try Turducken, try it. That's our favorite. It's a small boneless hen, with stuffing, inside a boneless duck with a different kind of stuffing, inside a partly boned turkey with stuffing. 3 different kinds of stuffing, 3 birds, and if you cut it right, you get some of all of it with each serving.

When early English settlors in Americans, they had a very hard life and always hungry. They prayed to the God for food and suddenly, I was told, that a flock of turkey came out for them to eat, so to speak. So Americans see Turkey in their thanksgiving day in Nov. Later, people also eat in at Christmas as well, because UK people no longer give thanks to God.
