There is more to consider. A young, quick growing goldfish will not last as long as an old, slow growing one. A goldfish in warm water won't last as long as one in cold water.
An large adult in cold water can go several weeks or even months. A baby fish in room temp water will doubtfully last more then a few days. No matter though, I would never have a probem leaving any fish without food for a long weekend and always do. Did you know many mouthbrooding tropical fish go a month without food instinctively while they raise the fry?
To understand how fish can go so long without food (and I'm sure there will be more then one response saying they can't) you should research the nature of how these cold blooded creatures work.

It depends on how well it was cared for before it started to not get fed. A well cared for goldfish that was fed every day of its life can go longer, maybe 2 weeks but I wouldn't let it go for more then a week tops, then a goldfish that is kept in crappy conditions and only fed once in a while.

I think a goldfish can go without food for at least three days but after that you will probably find it floating on the top of the water.
