Financial services, with most financial companies you can build your client base and ultimately build your own business and get paid more than once on business that you write through renewal income and bonuses. Most people that achieve success can reach low to mid six figures. I personally know people in my company that make six figures monthly but you can't have an employee mentality you have to have a business building focus.

I cannot give you any hard statistics, but I hear and read that (in the US anyway) there is a shortage of nurses (especially those who speak English) and pharmacists.
And Catholic Priests, but I am guessing that is not really what you are asking.
